BEETHUMMUS

A nice twist on the original, a bit sweeter and flavorful. And no worries, I would never give you a recipe with beets that tastes like sand! A recipe that is ready in a few minutes and easy to store in the fridge for up to a week.

Makes: 6 servings

Equipment: Food processor

Ingredients:
3/4 cup of chickpeas
1 small beet
tablespoon lemon juice
tablespoon of neutral oil
handful of fresh parsley
salt and pepper

Peel the beet and cut into smaller pieces. Drain the chickpeas in a sieve and rinse well with cold water. Now you can put everything in the food processor and mix until it is smooth. If your food processor has some difficulty, stop in between to push the sides down so that everything is getting mixed in well. If you don’t have a food processor you can always try it with an immersion  blender or blender, but you will need a powerful one.

Great to eat on a thick slice of bread with cucumber and tomatoes!
