I don’t like beets, I think they taste like dirt or soil. However, these burgers are one of my favorites ever. I was not sure to call them burgers because the only thing in common with a real burger is the shape. But I put it on a bun with a shit load of sauces so let me just call it a burger. Enjoy
Makes: 4 burgers
Prep time: 10 minutes
Cooking time: 10 minutes
Equipment: Food processor and pan
150-160 grams raw beets (3 small ones peeled)
half of a red onion
2 tablespoons agave
2 tablespoons tamari (or soy sauce)
3 tablespoons olive oil
2/3 cup oatmeal
Peel the beets and onion, cut them into smaller pieces so it’s easier for the foodprocessor to blend. Put the lid on and give the beets and onions a couple pulses. Now you can add the rest in: agave, tamari, olive oil and oatmeal. Blend until it is a smooth consistency, this takes 1 to 2 minutes, you can scrape down the sides if your food processor is having a hard time blending it.
Now you have a beautiful weird and very pink mixture, divide this into 3 or 4 burgers, depending on how big your bun is or how big your like your burgers. Wear plastic gloves if you don’t want to have pink fingers the rest of the day! The mixture feels a little runny and not very burger like, this is normal, the oatmeal in the mixture will set and the burger will hold its shape. After your formed the burgers cook them on low heat on a frying pan for 5 minutes on each side.
You can eat them with a salad, on an bun with some cream cheese or however you like. You can keep the burgers in an airtight container in the fridge for up to 4 days and you can freeze them up to 1 month.
