GRILLED CHEESE VEGGIE SANDWICH

Who does not love a good grilled cheese? This one is made with vegetables and a lot of cheese! With a number of tips to make the perfectly melted and crunchy grilled cheese sandwich.

Makes: 1 large sandwich
Prep time: 5 minutes
Cooking time: 10 minutes
Equipment: Frying pan with lid

Ingredients:
3 slices of white bread
1 tomato
a handful of spinach
half of a spring onion
1/2 to 3/4 cup of grated cheese (vegan if you like)
tablespoon of butter or margarine

Spread 2 slices of bread on one side with the butter or margarine and put them aside for a while. Cut the tomato into slices and the spring onion in rings, wash the spinach of it is not pre-washed.

Now we are going to build the sandwich. First you pick one of the slices of bread where the butter is on, the side of the butter goes in the pan so the other side has to turn upwards. Now put a little cheese on it, then the slices of tomato and then again a little cheese. Then the slice of bread with no butter on it, again a little cheese, spinach and spring onions and then again a bit of cheese. Finally the third slice of bread with the butter side up.

Place the pan on low to medium heat and carefully place the sandwich. Put the lid on the pan and now you leave it in the pan for 3 to 4 minutes. Remove the lid from the pan and flip the sandwich. If this is not very easy you can use a plate as a tool to turn the sandwich. Put the lid back on the pan and let it cook again for 3 to 4 minutes.

If you notice that the sandwich is too brown without the cheese melting, lower the heat. If you are not sure, you can remove the lid from the pan to check. Then finally, if you do not have a lid or something like that, use a piece of aluminum foil to cover the pan. This is important so that the heat stays in the pan and therefore the cheese melts well. This is just as important as the butter you put on the bread, this is the key to get your sandwich super crunchy. So do not skip these 2 steps!
