A super tasty vegetarian club sandwich that has only 350 kcal. Super tasty and totally not the feeling that you are eating a “diet product”. I am not necessarily a fan of naming calories anyway, but this was again an experiment to see if I could make a regular club sandwich a little less intense.

And it worked! You don’t have to compromise on the flavor and you don’t have to take a nap after eating this sandwich. I love it.

Makes: 1 sandwich

Cooking time: 10 minutes
Equipment: Cooking pan and toaster

3 slices of white bread *
1 egg
half tomato
6 pieces of cucumber
hand of mixed salad
1 slice of cheese

For the sauce:
2 tablespoons Remia frites lijn (non-fat mayonnaise)
1 tablespoon ketchup
pinch of paprika powder

First boil the egg, everyone has their own way for this but my key to a perfectly cooked egg is to bring a pan of water to the boil, add the egg and let it boil for exactly 9 minutes. Then immediately drain and place in cold water.

Toast the bread until nicely golden brown and let cool. Cut the vegetables and the egg all into slices and make the sauce by simply combining all the ingredients. Now you have everything ready and you can build your sandwich. Of course you have to know for yourself how to do this. The only thing I would recommend is to put a little bit of the sauce on all slices of bread so that everything sticks well.

The order that I follow is: bread, sauce, lettuce, tomato and cheese. Then a new slice of bread, both sides sauce, cucumber, egg and you guessed it, even more sauce. Finally the last slice of bread and voila, your club sandwich is ready.
