This dish is not traditional at all I think. But it is very delicious and very easy to make. It also fits perfectly in the category: you don’t need an oven but It’s called bake so actually you suppose to make it in an oven.

Prep time: 5 minutes
Cooking time: 20 minutes
Equipment: Frypan with a lid and cooking pan

2 cups macaroni
2 tablespoons tomato paste
1 1/2 to 2 cups canned tomatoes
teaspoon paprika powder(optional)
2 1/2 cups mixed Italian vegetables(onion, bell pepper, zucchini, leeks)
shredded cheese

Cook the macaroni according to to the instruction on the packaging, you can use white or whole grain, whatever you prefer. While the macaroni is cooking you can preheat your frying pan with the 2 tablespoons of oil on a medium heat. When the oil is hot enough you can cook the vegetables until they are tender. This takes about 10 minutes. Now you can add the tomato puree, canned tomatoes, a little bit of salt and pepper and the optional paprika powder. Give everything a good stir so It is well mixed. Cook on low heat for 5 more minutes. Your macaroni should be done by now, make sure your rinse it under cold water in a strainer to stop the cooking.

So now we have one pan with veg-tomatosauce and one strainer with cooked macaroni. Put the macaroni in the pan with the sauce and mix thoroughly. The heat is still on low. If everything is stirred in well, put your shredded all over, just how much you like. Put on the lid of the pan and let sit on low heat until the cheese is completely melted. Your macaroni bake is finished now. Enjoy!
