Yes really! As you probably noticed, I do not own an oven. So I became super creative with how I can continue to make my favorite recipes without it. Nacho party!

Makes: 2 portions
Prep time: 10 minutes
Cooking time: 10 minutes
Equipment: Frying pan with lid

bag of tortilla chips (8 cups)
can of black beans (2 cups)
1 red onion
teaspoon cumin
teaspoon of paprika
1 1/3 cups of grated cheese
tablespoon of olive oil
optional: chicken or veggie chicken

Optional toppings:
jalapeño peppers
pieces of sliced tomato
iceberg lettuce
fresh cilantro
creme fraiche

First cut your onion in half rings and fry them on medium heat in the tablespoon of olive oil in a frying pan. If you use chicken or veggie chicken, cut these into small pieces and also put them in the pan. Add the spices and some salt and pepper. Stir well. Drain the beans in a sieve and rinse well with cold water. You also add these in the pan and turn off the heat.

Put everything on a plate and clean the pan. Now you put the bag of tortilla chips in the pan, your onion-bean mixture and then sprinkle all the cheese over it. Put the lid on and put on very low for about 5 minutes or until all the cheese has melted. Low heat is important, otherwise the nacho chips will burn before your cheese is melted.

When it’s done, serve with all your favorite toppings!
