Makes: 3 or 4 portions
Prep time: 5 minutes
Cooking time: 10 minutes
Rest time: 10 hours
Equipment: cooking pot
3 cups of soy milk
4 tablespoons of soy yogurt
Put the milk in the pan and turn on the stove on medium heat, bring the milk to a simmer, about 80 degrees. Don’t bring it to a boil but when you see small bubbles on the side of the pan, it’s good. Turn off the heat and let cool for exactly one hour. Now the milk is around 40 degrees. To prevent getting a skin on the cooling milk, you can take a piece of plastic foil (cling film) and put it over the milk, so that it touches the milk everywhere.
The next step is to mix the purchased yogurt with the cooled milk. Stir well, preferably with a whisk. Cover again well and put it in a warm place, for example: where a heating is or in a closed oven, it must be above 30 degrees. Leave it for 8 to 10 hours and then your yogurt is ready. I know, It takes some time to make but it’s very fun to do!
If you want to make another batch, you can take 4 tablespoons of this batch and make new yogurt from it again. Then you never have to buy yogurt again 🙂
