With the most flavorful sauce ever! The summer rolls are full of different veggies, so super healthy. Are you not a fan of one of the vegetables and really like something else? Just mix it up! Put any veggie in. That is the best thing about these kinds of recipes, you can set it completely to your own taste and liking.

As a last tip for people with a peanut or nut allergy, only replace the peanut butter with tahini. Just as delicious and creamy!

Ingredients summer rolls:
a package of rice paper sheets
1/2 cup of rice noodles
half of a cucumber
a large carrot or 2 small ones
1 bell pepper
1 avocado
optional: alfalfa sprouts and Thai basil 

Ingredients peanut sauce:
1/4 cup of natural peanut butter
1 lime, squeezed 
1 tablespoon hoisin sauce
2 teaspoons of soy sauce
1 teaspoon garlic powder
2 teaspoons agave syrup
1 teaspoon sambal
6 tablespoons of warm water

First, cook the rice noodles according to the instructions of the packaging.

Cut the cucumber, bell pepper and carrot into very thin strips as in the photo. Also cut the avocado into slices and make sure the alfalfa and Thai basil leaves are ready if you’re using that. It is efficient to have everything ready to go before you start working with the rice sheets.

Take a large bowl with lukewarm water and a cutting board to roll the summer rolls. Put the rice sheet in the water for about 5 seconds and then on the cutting board. Put all the vegetables that you have ready and the rice noodles on the rice sheet. If you would draw a smiley on the circle then you put the vegetables where the smile would be 🙂

Now roll the rice sheet by first placing the bottom that is closest to you over the vegetables, then you fold the left and right sides to the middle and finally you can roll it in one go. It may take a couple of tries before you have a perfect summer roll. So you make a few more until all your vegetables and rice sheets are used up.

To make the sauce, put all the ingredients in a bowl and stir everything well with a whisk or fork. It can take a while before everything is well mixed. If you still find the sauce too thick, you can always add some extra water to thin it out.
