A very fresh summer snack or side dish. The lime and parsley is really an awesome combination with the sweetness of the potato!

You can choose to wash the potatoes or peel them. I have been told that all the vitamins are right under the peel and that it is very healthy to eat it like that, so I did, and by leaving the skin on it will become extra crispy. But if you don’t like that at all, just peel it.

Anyway, a great healthy snack idea again!

Makes: 2 servings
Prep time: 10 minutes
Cooking time: 15-20 minutes
Equipment: Oven

2 large or 4 small sweet potatoes
2 tablespoons olive oil
pinch of paprika powder
pepper and salt
1 lime
handful of parsley

Preheat the oven to 200 degrees celsius and make sure your oven rack is ready. Cut the sweet potatoes (with or without peel) into French fries and put them in a large bowl. Add 1 tablespoon of olive oil, the paprika powder and salt and pepper. Mix this well so that everything is evenly distributed and all fries have a layer of oil. Place the fries on the oven rack and make sure that they do not touch each other, this way they will get crispest. Put them in the oven for 15 to 20 minutes, every oven is different so just check on the potatoes and when they are beautifully golden brown and crispy you can take them out.

In the meantime we are going to make the sauce, which is super easy. Put the zest and juice of the lime together with the other tablespoon of olive oil, parsley and some salt in a blender or food processor and blend until smooth. If you find this too much trouble you can also choose to finely chop the parsley and mix it all in a small bowl.

Remove the fries from the oven and let cool for 5 minutes, then the fries can be put in a large bowl together with the sauce, mix everything well so that it is evenly distributed again and your fries are ready!
