Healthy salad time! Spring and Summer are almost here (kind of). I would eat this as a side dish, maybe bring it to a barbecue or get together. One of the few salads I really like.
Makes: 2 portions

Cooking time: 0 minutes
Equipment: A blender or immersion blender
3 cups of grams of spinach
1/4 cup of walnuts
1/4 cup of almonds
1 spring onion
2 tablespoons of olive oil
pinch of salt
teaspoon of agave syrup
Peel the tangerines and break them into wedges. Cut the avocado, both types of nuts and spring onions all in small pieces. If you like it, you can also cut your spinach into smaller pieces instead of the whole leaves. This does make eating the salad a little easier. Now put all the sliced ingredients in a large bowl and mix well.
To make the dressing, put all the ingredients in a measuring cup if you use a hand blender or just in a normal blender. Blend it for about 30 seconds to a minute until it is a smooth liquid. If there are pieces or flakes in the because of the tangerine, you can always put the blended dressing through the sieve.
Serve the dressing next to it or mix it all the way through the salad. A very fresh and healthy summer salad!
