For those days that can use a little spice.
Makes: 2 big bowls
Prep time: 10 minutes
Cooking time: 20 minutes
Equipment: Soup pan and a immersion blender
1 tablespoon olive oil
1 medium white onion
1 clove of garlic
1 red bell pepper/paprika
2 cups diced fresh tomatoes
teaspoon paprika powder
1 bouillon cube
500 ml water (little more then 2 cups)
Peel the onion and garlic and cut them into small pieces, also cut the bell pepper and tomatoes. It’s easier to cut everything ahead zo It’s all ready to go. Put your pan on a medium heat with the oil so it can preheat. First put your onion in and cook for a couple of minutes. If the onion is turning brown very fast, your heat is too high. If nothing happens, your heat is too low.
After the onion is cooking for a little bit you can add the garlic and pepper, cook with the onions for a couple of minutes and give it a stir.
Now you can add the bouillon cube, water, tomatoes and paprika powder. Bring to a simmer and turn the heat down so it won’t cook too hard. Let simmer for 10-15 minutes, stirring occasionally.
To check if everything is cooked you can insert a knife or fork in a piece of pepper, if it feels soft everything is cooked. Take the pan of the heat and let cool voor 2 or 3 minutes. Blend everything with your immersion blender until It’s smooth. Your soup is done now!
