A heavenly, messy and sticky chocolate cake. Not difficult to make at all (but takes some time) and it’s completely vegan. A small tip for frosting the cake: I could not find my special spatula that I use for frosting anywhere so I used just a normal, not sharp knife and this worked really well! Makes the cake look extra messy and muddy!

Cooling down: at least 2 hours
Equipment: Cake pan of 22 cm diameter

2 cups of oat milk
2 teaspoons of vinegar
1 1/4 cup of unsweetened applesauce
2/3 cup of coconut oil
2 heaping cups of flour
1 1/3 cup of sugar
1 cup of cocoa
2 teaspoons baking soda
1 tablespoon baking powder
pinch of salt

Ingredients frosting:
1 cup of margarine
2 1/2 to 3 cups of powdered sugar
1/4 cup of dark chocolate, melted
2/3 cup of cocoa
1/4 cup of oat milk

First, preheat the oven to 180 degrees celsius and grease the baking pan with some coconut oil or margarine and set aside. Add the 2 teaspoons of vinegar to the oat milk and let this sit for a while. Then mix the sugar with the coconut oil and apple sauce in a bowl, mix it well so that all the sugar is absorbed and it is a smooth batter. You can use a whisk or an electric mixer.

Then mix the flour, salt, baking powder, baking soda and cocoa in another bowl. Now add a third of the dry ingredients to the oil-sugar mixture and mix, then half of the oat milk, mix again and again and repeat until everything is well combined. Put the entire batter in the greased baking pan and put in the oven for 60 minutes, check after 50 minutes with a skewer or toothpick if the cake is cooked on inside. Every oven is different so it may take longer or shorter for the cake to be completely cooked. When the cake is ready, remove from the oven and let cool completely. Preferably colder than room temperature, so half an hour in the fridge would be great.

In a large bowl, mix all the ingredients for the frosting and taste if it’s to your liking, if you prefer your frosting sweeter add some more powdered sugar, experiment a bit with with this so you will love it.

Cut the cake in half, it’s supposed to be a messy cake so this doesn’t have to be perfect. Spread about a third of the frosting on the first cake half and spread well. Put the other cake half on top and spread the rest of the frosting on top and on the sides. Your cake is ready!
