VEGGIE WRAPS

Great to make these wraps as lunch or fast dinner. Both tasty when made cold or hot. Small warning: the sauce is pretty spicy! If you do not like this, replace the chipotle sauce with, for example, sweet chili sauce, also super tasty. You can also easily take the rolled wraps to school or work in a plastic package!

Makes: 4 small wraps
Prep time: 5 minutes
Cooking time: 5 minutes
Equipment: Cutting board

Ingredients:
pack of mini wraps
1 cup of black beans
1/2 cup of grated carrot
1/2 cup of red cabbage
1/2 cup lettuce of choice

for the sauce:
2 tablespoons of mayonnaise
2 tablespoons chipotle sauce

First make the sauce by mixing the mayonnaise and chipotle sauce (I use the brand La Morena) in a container. Set it aside. Grate your carrot, cabbage and lettuce if you have not chosen pre-cut packages. Drain the beans and rinse well with cold water.

Now you have everything ready. You can choose to bake the vegetables and beans in a frying pan, but I always find it easy to eat the wraps just cold. Your choice! If you are going to bake it, do not do this for more than 5 minutes, the beans will dry out and the vegetables will be too fried. The rest is super easy, fill the wraps in the order you want, serve the sauce next to it, over it or in the wraps.
