Makes: 7-8 waffles
Prep time: 5 minutes
Cooking time: 15 minutes
Equipment: waffle maker and food processor
2 cups of flour
3 1/2 tablespoons of sugar
2 1/2 teaspoons of baking powder
1 teaspoon of baking soda
1 cup of almond milk
3 tablespoons of coconut oil
Weigh all your ingredients and put them in the food processor. You can also mix it in a large bowl with a whisk or spatula but it is a very thick and sticky mixture so I prefer to put everything in the food processor and mix well.
Preheat your waffle maker, each waffle maker has its own settings, so use it according to the instructions. Before you put the mixture in, spray well with the oil spray. It is a very sticky one so if it is not properly greased, it may stick.
Put a few tablespoons of the mixture in the waffle maker and click it so it’s closed. Often the waffle iron shows itself with red and green lights when it is ready. It takes about 3 minutes for mine. In the meantime, do not open the waffle iron for checking, they can break or fall apart.
Carefully remove with a fork or spatula and spray again with the oil spray for the next waffle that you are going to make, and so on until all your mixture is used up. Serve with syrup, powdered sugar and strawberries. The best combination!
